A regular called the flat white the best in the country. That kind of claim earns scrutiny, and Verb Coffee Roasters in Boulder mostly earns the scrutiny. Third-wave roastery on 30th Street, multiple rotating single-origin pour-overs dialed in tight, pastries from Dry Storage, and a sparkling-water-with-espresso service on a small wooden tray that signals the program takes itself seriously without taking itself too seriously. Owner Mary draws warm callouts from regulars.
Modern-industrial space, sleek and slightly tucked away. About 12 seats. The bench seats run awkward for back support, which is the recurring complaint from long-session laptop users.
Order the flat white if you want to test the claim. The chai latte holds up if you want a non-espresso option. A cortado is the third move. The pour-over rotation changes regularly, so ask what is open today and trust the answer. For food, a chocolate chip cookie is the easy add-on, the bacon burrito is the breakfast anchor, and the rhubarb danish is the seasonal pull.
2% milk is now available, which is unusually rare for third-wave and signals the cafe is willing to meet customers where they are rather than only serve whole milk and oat.
The room belongs to serious coffee customers and baristas on their off days, to regulars showing up three to four times a week, to dog owners, and to laptop workers with the back-support caveat in mind.
One logistical problem to take seriously: the parking situation. Verb's lot has a two-hour limit, and $170-plus tickets after the two-hour mark are a recurring, well-documented problem. Set a timer. Move the car. Or walk in. The coffee is good enough to come back for, but not good enough to lose two hundred dollars over.
