Banyan Coffee Co. in Palmetto was started by Josh and Abbey Schmitt, who first roasted in their garage with a popcorn popper. Now there's a big glass window so you can watch the roasting, and 10 to 12 single origins rotate. Inside, there are wooden rafters, cypress counters, a blue tile bar and vintage industrial lights. Sliding windows let in the breeze, and there's a plant-filled patio. Parking's limited on weekends.

The Honey Badger is the house drink. Try the Bourbon Barrel Aged Cold Brew or the Smoked Macchiato. A dirty chai, iced lavender honey and iced chai are regular picks. Grab a bag on your way out.
