Bindle Roastery + Bakehouse is genuinely hard to find. It sits behind the Cinemark in an industrial-style building on the south end of Fort Collins, and the warning shows up across customer accounts. Put the address in your phone, then look again. Once you are inside, the payoff is a laid-back warehouse with antique furniture, plants, an upstairs loft, and a sunny patio. Lots of seating. A real sit-and-stay layout rather than a grab-and-go one. The loft is the spot regulars claim if it is open.

The drink that comes up most often is the Caramel Bourbon Latte. After that, the lavender drinks, the espresso, and a matcha that holds up against the flavored stuff. The bakery is not a side project. The cinnamon roll is worth asking them to warm up. Breakfast burritos handle the savory end. Everything is in-house, and the team treats both halves of the operation with the same seriousness. The roastery and the bakehouse share a building because the people running them want them to. Friendly staff get called out across customer accounts, which fits the room: long conversations are part of the design.

This is a working-from-here kind of room. Long conversations, longer sessions, dogs welcome on the patio, regulars who plant themselves at the loft tables for the afternoon. The one caveat customers flag is temperature: at least one fall visit ran cold inside. Bring a layer in the shoulder seasons. People expecting a walk-in storefront on a main drag should adjust their expectations. The building does not announce itself, and the experience inside has nothing to do with what the parking lot promises. Find the door, climb the stairs, order the bourbon latte and a warm cinnamon roll, and the place starts to make sense. Fort Collins has plenty of cafes that are easier to find. None of them do the warehouse-meets-bakehouse format with the same conviction.
