Bison Union is combat-veteran and cowboy-owned, sits on N Main St in downtown Sheridan just off I-90, and roasts daily. The decor is wood, leather, and steel. Country music on the radio. Comfortable couches in a seating area built for tourists passing through and locals talking shop with the staff. Outlets where you need them. The whole room reads Wyoming without being a costume, which is the difficult thing to pull off in a town that gets summer visitors who want exactly that.

Merchandise is a real part of the operation rather than an afterthought on a shelf by the door. Western-themed shirts, hats, sweaters, and especially stickers; the sticker selection gets called out enough in the regular feedback that it is clearly a thing, and worth a separate trip if you are a sticker collector. The Ranch Hand dark roast is the bag to take on the road with you when you leave town. The Vanilla draft cold brew is the signature drink and the one to order on a first visit. The iced honey latte with oat milk is the steady order for the regulars. Iced vanilla, hazelnut, Americano for the no-frills crowd that wants a working cup of coffee and no commentary.

The shop is dog-friendly to the point that customers describe the owners as huge dog lovers, which matters if you are road-tripping the Bighorns with one in the back seat and need a stop that will be glad to see all of you. Remote workers will find WiFi and outlets. Tourists will find a real Wyoming room that is not playing a part for the cameras. Locals will find the same and have been finding it since the doors opened.

A couple of honest notes worth surfacing. There is no outdoor seating mentioned in the regular feedback, which limits the summer evening options. Pricing runs slightly expensive, which makes sense for a downtown roaster on a tourist-anchored Main Street but is worth knowing if you are budget-conscious or buying for a group. If you are pulling off I-90 and want a daily-roasted bag, a Vanilla cold brew, and a sticker for the cooler, this is the stop and the regulars will tell you so.
