Bivouac Coffee

Bivouac Coffee is off Bergen Parkway in Evergreen, a short detour from I-70. Every drink comes with a mini stroopwafel. They roast naturally processed, low-acid coffee on-site, with a focus on sustainability, and their site calls it a tasting room.

The cortado and cappuccino are the espresso picks, and the drip and pour-over really show off the natural-process beans. If you're not in a coffee mood, try the ceremonial cacao. To take home, there's Bump Start whole bean and their Ethiopian.

It's a cozy mountain café, with tables, high tops, couches and seats outside, and you can see the roaster from inside. Skiers, cyclists and remote workers stop in, and dogs get a water bowl and toys.
