Owen and Danielle run Cafe do Paraiso out of a space on West Post Road, but the place you will meet them is the Downtown Summerlin Farmers Market on Saturdays. They are clear about what this is: a roaster, not a coffee shop. No counter to walk up to most days of the week, no menu of seasonal lattes, just beans roasted in small batches and sold direct.

The Ethiopia Guji is the bean to chase. The house signature is smooth coffee with the bitterness engineered out, which lands somewhere between a soft natural and a careful washed profile, and the Guji is the cleanest expression of that style. At the market they pour cold brew and iced coffee from it, and a hot day in Vegas does that drink a lot of favors. The signage and presentation read polished without trying too hard.

There is one honest caveat. Delivery turnaround has not been consistent. If you order for pickup and Owen has your bag ready when promised, you will be a regular forever. If you needed it Tuesday and he is roasting through a backlog, you will hear about it on Thursday. That is the cost of buying from a two-person operation. For Las Vegas drinkers willing to plan around a Saturday market trip, the trade is worth making.
