The on-site roaster supplies multiple Kubal locations around downtown and has been called the best local roaster in town. Italian-style espresso is the house style, and bags of beans are sold for home use.

The room is bright, quaintly decorated, with lobby furniture that one customer called loved-in. The crowd skews laptop workers and freelancers, pastors meeting near the church, and Italian-espresso enthusiasts who came specifically for the cortado-and-macchiato lane that this style of bar does best. The light, the wood, and the well-worn seating make it a comfortable place to settle in for a stretch.

Order the French Toast Latte if you want the signature sweeter drink. The honey lavender latte is the next-best move in that direction. The Ethiopian Light roast pour-over is the order for anyone who came to taste what the roaster is doing on the single-origin side. The lunch bagel and the avocado toast with poached egg handle the food side, and the banana bread with chocolate chips is a fixture in the pastry case that regulars reach for without checking.

A few honest notes before you commit a working morning to this location. Street parking is the only option, which means a meter and some walking on a busy day. Microwaved food has been flagged in recent reviews. One regular has noted a decline in quality across the cafe operation. The roaster is still the draw, and the espresso program still earns its reputation, but the cafe service around it has gotten uneven enough to mention. The bag for home brewing remains the cleaner way to get what Kubal is doing well, and the Water Street setting is still the right downtown coffee stop for anyone walking from Armory Square.
