The roaster is the centerpiece. Walk into Coava's Public Brew Bar on SE Main St in Portland and the roasting equipment is what you see from the bar, which tells you what the priority is in this room. The space is industrial and quiet. On a weekday morning it's calm enough to read a book at, or to hold an actual conversation with the person across the table without leaning in to be heard.

Coava has been named Portland's best coffee multiple years running, and in this city, where the bar is set high enough that the contenders include some of the best small roasters in the country, that means something. The density-separation roasting process is the company's technical signature and what serious coffee people stop in here specifically to taste. Pour overs are the order. A cortado or a cappuccino is the alternate move. That's most of the menu. Retail bags freshly roasted are the other half of the offer, and they sell fast.

One person flagged the space as not their taste. Most call it cool. The split is honest and worth surfacing. The room is austere in a way that some people find clarifying and other people find cold and unwelcoming. Know which kind of cafe person you are before you build a morning around it, because the room is what it is and won't soften for anyone.

Dogs are welcome here and across the other Coava locations. The shop is the kind of small-roaster operation Portland still does better than anywhere else, and the brew bar is built to be exactly that, a bar, not a coworking space. There's no wifi, no laptop culture in the seating, no expectation that you'll sit for three hours with a laptop and a single drink. Come to taste, to buy beans the day they came off the roaster, to watch a roaster work through a small batch behind the bar. That's the visit. Anything else and you've picked the wrong shop in a city that has many right ones for other purposes.
