That's the operating premise at Coffee Enlightenment, a third-wave roaster in Round Rock where the menu reads more like a tasting flight than a coffee shop, and the owner is on the floor often enough that you'll probably end up talking to him before you order. The shop runs classes, builds flights across origins and brew methods, and roasts its own beans.
The room is bright and white, intentionally designed. One regular called it sterile, which is fair if you came expecting worn wood and warm light. The AC runs cold. Sofas and small tables anchor different zones, with outdoor seating off to the side, and the lighting changes depending on where you sit.
Order a tasting flight. That's the whole point. Siphon, Chemex, and pour-over options run across origins, and you'll learn more about your own palate in twenty minutes than in a year of plain americanos. Spanish latte is the signature milk drink. The Pina-themed roast as a pour-over is the bean to ask about. A cappuccino in a mug for the regulars who want the same thing every time. Dirty matcha and Vietnamese coffee round out the alternatives. The chocolate croissant is the pastry. The brewing classes are worth a Saturday morning if you're trying to up your home setup.
The wifi clocks in at around 470 megabits, fast enough that remote workers have started building it into their routines. The owner-curated detail extends to the bean choices, the brew options, and the lighting; this is somebody's project, not a chain-out template.

For anyone wanting a homey lived-in cafe, the design will read cold. For anyone in a hurry, the slow brews take what they take, and that's the trade-off the menu is built around. Order the flight.
