Cortez Coffee - The Roastery

Ron is the coffee scientist who built Cortez Coffee. Decades of wholesale roasting came first, and a small retail shop in Tempe came later, after Ron decided he wanted customers to taste the Primo bean and learn where it came from. He gives samples. He explains shots to anyone who asks. Regulars describe him as an artist and an innovator, and the menu reflects that with unusual fermentations and process experiments that don't usually show up at a strip-mall coffee bar.

The Primo is the flagship. Order it as espresso or as a pour-over and let Ron tell you what to look for in the cup. Juicy Lulo is the fermentation experiment that regulars come back to specifically, with a flavor profile that doesn't have a clean reference point in standard third-wave coffee.
