Ron is the coffee scientist who built Cortez Coffee. Decades of wholesale roasting came first, and a small retail shop in Tempe came later, after Ron decided he wanted customers to taste the Primo bean and learn where it came from. He gives samples. He explains shots to anyone who asks. Regulars describe him as an artist and an innovator, and the menu reflects that with unusual fermentations and process experiments that don't usually show up at a strip-mall coffee bar.
The Primo is the flagship. Order it as espresso or as a pour-over and let Ron tell you what to look for in the cup. Juicy Lulo is the fermentation experiment that regulars come back to specifically, with a flavor profile that doesn't have a clean reference point in standard third-wave coffee. Columbia Ocampos and Cameroon beans round out the bean board for customers wanting to explore beyond the flagship. The space is small and clean, with counter service in front and the roaster setup in the back. WiFi is strong. Sometimes nobody is up front and you have to call back to get attention, which is part of the small-operation charm and the small-operation friction. Better understood as an experience-driven coffee bar than a hangout cafe, even with the working internet that might suggest otherwise.
The fit is coffee-curious learners who want to talk shop with the roaster, home brewers ordering unusual lots by mail, customers interested in what fermentation does to a bean and what process experiments taste like. The fit is not the laptop camper looking for an all-day workspace with a steady pastry case and a busy crowd to disappear into. Ron is the reason to come, and you can't come without engaging with him.
