Ember and Bean is a third-wave shop in the rear of a downtown Hudson building, near the St. Croix River and a riverside park, and a few things will hit you in the first five minutes. Owners Jess and Jon are named by customers; Jess does the hands-on bean buying which is the part that matters for what ends up in the cup. Lattes routinely run seven dollars. Parking downtown is described as nightmarish. The location is set back enough that more than one customer has had to look twice to find it on a first visit.

None of that is hidden in the regular feedback, and most of it is the cost of the operation being what it is. The pour-overs are dialed. The espresso is in third-wave territory and shows it. The bean bags for sale are roasted in house. Pop-Tarts and lemon loaf come out of the kitchen and earn their callouts. The sweet potato hand pie is the one to grab when it is in the case, and it goes fast.

The room is cozy, warm, and inviting, with a couple of tables, counter seating, and stools in lattice-pattern leather that look better than they sound. The main room runs loud and busy at peak, which is the trade-off of being the cafe people want to be in. Quieter overflow seating lives in a hallway beyond the main space, and there is another area built for taking calls. Patio out back when the weather works, which in Hudson means roughly May through October. Dogs are welcome inside, which a portion of the regular base loves and a portion does not; know which side you are on before you walk in.

Drinks. Pour-over for the coffee-forward order. Mocha with oat milk. The George, which is coffee with banana flavoring and the house's personality move. Caramel latte. Vanilla breve. The chai is spice-forward and good. Cold brew. London Fog with lavender and vanilla. Seasonal cardamom latte. Cinnamon-plum syrup latte when that one cycles through the chalkboard. Hudson has a Wisconsin Coffee Passport, and Ember and Bean is on it; if you are stamping the book, this is the stop, and worth the seven dollars to do it right.
