Ember Coffee Co. in Big Lake has been air-roasting coffee since 2021 and was voted Minnesota's Best Coffee from 2023 to 2026. The café is bright and comfortable, with couches, work tables, local art and a kids' playroom behind French doors.

The air-roasted coffee is smooth and clean. El Jefe espresso, Attitude Adjustment and Walnut Crumble Crunch are favorites, and coffee flights let you try a few. The syrups are house-made. The Cheesy Beast breakfast sandwich is popular, and there are gluten-free options. In summer, there's ice cream and affogatos.
