Erie Coffee Roasters sits just off I-25 in Frederick, Colorado, the kind of stop you'd never plan but should. Owners Libby, Sean, and Andrew (with staff like Lance) roast in-house, source from origins around the world, and have entered cold brew competitions. The team is small and knows what they're doing, which is the kind of detail that's hard to fake when you're talking to them across the bar. The room is cozy and homey, vinyl on a record player in the corner, a private back room if you need quieter space for a meeting or a phone call. The main room has limited seating. Three or four choices, total. That's the trade-off for a place this small, and the trade-off is real. Multiple customers describe it as worth the detour off I-25, which says something when the highway has plenty of faster alternatives at every exit. Order the Dirty Larry with macadamia milk or the honey lavender latte. The ham and cheese croissant and the breakfast burrito both hold their own at the food counter without any apology. On Fridays the cardamom buns and sourdough come out of the oven and sell out early in the day, so the move is to get there before late morning if you want one. By noon the case is empty. Black Gold cold brew concentrate sells by the bottle to take home and pour over ice in your own kitchen, and the shop offers free refills, which is increasingly rare in specialty coffee. The whole operation runs on knowing the customer and the bean equally well, which is the kind of small-shop math that only works when the owners are on the floor. Best fit for Front Range road-trippers who want an independent stop off the highway, locals who care about knowledgeable staff and rotating single-origin offerings, and anyone planning a Friday morning around fresh-baked goods. Less good for groups that need space, or anyone hoping to settle in for a long work session. The room isn't built for it, and the team isn't pretending it is.
