The Elgin operation sits unassumingly in the back of an office park on South Grove Avenue, the kind of address that doesn't read as a destination until you walk in and smell the roaster. The roast date matters here. Beans are often roasted the day before pickup, and the menu cycles through Honduras, Colombia, Guatemala, Sumatra, and Ethiopia depending on what's fresh that week.

Pour-over is the way to drink it on-site. An Ethiopian pour-over, light or dark, lets you taste what they're doing without milk in the way. For home, the Forte espresso has a following for home cappuccinos, and a light Ethiopian blend rounds out the shelf. The wide single-origin selection is the kind of range you don't tend to see at a roaster this size in a Chicago suburb. The team can talk you through which origin lines up with how you brew at home.

The space is charming but small, dedicated more to making and selling coffee than to lingering. One customer explicitly wished there was more indoor seating. There isn't much. The shop is set up for people who come to pick up beans and chat with Eric's team about what's worth trying this week, not for a full cafe sit-and-stay. The team is knowledgeable enough that those conversations tend to be worth the trip on their own.

Who it suits: home brewers and pour-over drinkers who care about roast dates, origin variety, and getting practical guidance from people who know the beans cold. Less the right move if you want a sprawling cafe with couches and a food menu and a long stay. Come for the freshness, ask the team what they're excited about this week, and walk out with a bag that was in the roaster the day before. The office-park address is a feature, not a bug.
