Fulcrum is a working roastery in SoDo that happens to let you in. Walk through the door and somebody will greet you, ask what you like, and brew you a cup of whatever bean you point at. That is the whole experience, and it is genuinely warm if you arrive expecting a roastery and not a polished retail cafe. They run barista training out of the same space, with an instructor named Shimon who gets named back by customers who took the class, and the wholesale business supplying Seattle cafes is the bigger half of what they do.

The lattes are where they get creative. The white coffee gets called out by name often enough to be the curiosity order, though it is the one with the most variability across recent bags, so order it as a cup before you commit to a kilo. There is indoor seating and a bit of outdoors, though nobody is going to mistake it for a Capitol Hill third-wave room. The vibe is industrial because the building is industrial. Pallets, drum, scale, a counter, a kettle, a person.

Honesty: a recent customer found wood chips inside a retail bag, and roasts have come out of the drum less consistent than they should be more than once. A roastery that trains baristas should be cleaner on QC than that, and it is worth knowing before you walk out with a kilo. Buy a smaller bag, brew it, and decide whether the same lot is worth a larger order.

This is a stop for coffee buyers and cafe operators who want to sample directly from the source, and for travelers passing through Seattle who want beans roasted by people who will look up from a green-bean sack to say hello. If you are after a Saturday hangout with pour-overs and a pastry case, you are in the wrong building. If you want to see how the cup gets made and walk out with a bag in your hand and a real conversation behind it, the SoDo door is open. Bring questions. They have answers.
