The darkest roast is what some people drive in for.

The space is cozy and warm with antique decor, the Southern relaxed feel that makes a coffee shop into a place you stay in for an hour without checking your watch. Booth seating with outlets for laptops. Armchairs for the no-laptop crowd. The chess setup for whoever wants it. Long conversations happen here as a matter of design rather than accident.

The mercantile half of the operation is not a gimmick. The infused olive oils and balsamic vinegars are the kind of selection that draws people in for ingredients and gets them to stay for a coffee, or the other way around. The retail browse and the roasting program reinforce each other in a way that single-purpose coffee shops can rarely manage. Tea and spice selections round it out. Gift items keep the Saturday afternoon foot traffic moving.

The one thing to flag, because some customers do, is syrup. Gilmore's uses Torani rather than housemade, which after a certain point in the specialty-coffee conversation becomes a tell. If your latte-flavor expectations are calibrated to shops doing in-house syrups, you will notice the difference. If you are ordering the Americano, the dark roast, or anything that does not depend on the syrup, you will not.

For remote workers who want a booth, an outlet, and a quiet morning, plus the option to leave with infused olive oil for dinner that night, Gilmore's fills a specific niche that downtown Gastonia is lucky to have. The chess board is open. The roast is honest. The room rewards staying.
