Craig is on the roaster most days. Grand Rapids Coffee Roasters operates out of a Godfrey Avenue suite where the owner has been in coffee twenty years and runs a Saturday Experience event where regulars sit down and learn about origins, roasting, and brewing methods, mostly because Craig wants to teach. The shop runs no specialty-drink menu. There is no flavored-latte board. The product is the coffee and the conversation, and the smell of fresh roasting hits at the door before you have made it to the counter. Order whatever Craig is roasting that morning. Have the beans ground for V60 or pour-over to take home. That is the move, and the team will walk you through which grind to ask for if you tell them what you brew on. The room is small and welcoming with warm seating and a counter setup that puts you in talking distance of the work, which is the whole point of how the space is laid out. The Saturday Experience is worth knowing about if you live nearby, because it is the kind of session where you sit down and come out understanding the roast curve in a way no blog post will give you. Conversations with Craig at the counter on a regular weekday do most of the same work, in shorter form. Home-brew nerds learning their setups and curious newcomers who want to understand what a single origin is will get a lot out of an hour here, more than they would at a cafe twice the size. People who came for a flavored latte and a four-hour laptop session will be in the wrong room and should pick a different stop in town. Show up with questions. Leave with beans, a brew suggestion, and a sense of where the bag came from. That is the deal, and it is a clear one.
