The roasting equipment sits in full view from the cafe floor, which is the point. LaShaw Ranch (formerly Tom Sawyer Country Coffee, originally out of Spokane) relocated to Rockford, WA under new ownership and built the room around the roaster. Light industrial interior. Walls decorated with vintage coffee tins, old packages, antique grinders, coffee pots from another era. A large garage door rolls up in good weather and opens the cafe onto the patio.
Coffee flights are the smart way to taste through what they do. Both the drip variety and the original menu run as flights, so a first visit can cover several beans without committing to a single order. The Viking Dark blend is the big seller and the bag most first-time customers leave with. Blondie, a praised darker roast, has its own following among regulars who do not want a light roast and do not want bitter, which is a more crowded preference than the specialty world tends to acknowledge.
A nitro cold brew with cinnamon is the year-round order on the cold side. A turmeric Golden latte covers the non-coffee crowd. There is also ice cream and smoothies, both of which read as the kind of menu expansion a rural cafe makes to be useful to more customers in town, and the caramel pretzel ice cream is the one to ask about specifically.
The patio is dog-friendly, which matters in this part of Washington where the dog usually came with you. A conference room and the patio together make the cafe workable for casual meetings without disrupting the regular floor, which is the kind of layout decision that signals the new owners thought about what the building could be rather than just what it was.
Watch the roast happen behind the counter. Drink the flight side by side. Leave with a bag of whatever caught your tongue. The vintage tin decor is the visual signal that the cafe takes the history of coffee seriously, and the roaster running in the background is the proof that the history is being added to rather than just displayed.
