Mostra Coffee has been named Roaster of the Year, and the Filipino-inspired drinks are what made the reputation. The Creme Brulee Latte (hot only, sugar torched on top) is the order that put the company on the map, and the Bibingka Creme Brulee Latte deepens the bench. The 4S Ranch location on Craftsman Way is one of several shops, sitting in a strip mall plaza with bright trendy interiors and a generous spread of outdoor benches and tables.

The Choconana is the wildcard. The Iced Campfire Latte and the Iced Chagaccino are the cold-weather and hot-weather picks. The pumpkin cloud cream cold brew turns up seasonally and is worth catching when it does. Coffee-curious visitors who haven't tried Filipino flavors should start with the Creme Brulee Latte and work outward from there. The hot-only constraint matters, since the sugar torch is the trick.

Here's the honest part. Recent visits at this location suggest a noticeable decline since opening. Cleanliness has slipped. The rewards program was dropped, which long-time regulars haven't forgiven and bring up unprompted. The inside often gets overrun with laptop users who claim the few two-to-three person tables for hours at a stretch. Stock has been inconsistent on certain drinks.

The outdoor benches and tables are the better seat right now, and the strip-mall plaza setting makes the patio a fair laptop spot if you can avoid the inside crush. For Filipino-flavor curiosity, the drinks remain the reason to visit. For everything else, the 4S Ranch shop is not the version of Mostra at its best. The roastery reputation still earns the visit, but manage your expectations on the cafe side. The cleanliness slip is the part that hurts the most for a roastery with the awards on the wall. The drinks remain the draw on the menu side. The cafe-floor execution at this address is the problem, and the management has not yet shown it can fix the gap.
