Jayson roasts to order. Mr. Dapper operates out of a small footprint inside the Edison Restaurant on McGregor Boulevard in Fort Myers, which makes it more a roasting operation with a pickup point than a cafe. The bags ship nationally. Local customers come by for fresh whole bean. The owner has been known to roast custom blends for groups in the area, including a run for the GulfShore Mustang Club, which gives you the texture of how the business works. You ask for a bag. Jayson roasts the bag. You pick it up or it ships. The shelf list is wider than most small roasters of this size. Bourbon Barrel Aged is the bag people come back for, and the one most repeated as the order to make. Creme Brulee and Banana Foster cover the flavored side. Jamaican Blue Mountain handles the high-end ask. The Brazilian Roast is a workhorse for daily drinkers. Cold brew is on the menu. There is no sit-down room to speak of, no atmosphere to describe in the customer reports, no real dwell time. The footprint inside Edison is not a cafe. If you wanted a cafe morning, this is not it. If you wanted a Southwest Florida roaster who will pick up the phone, roast what you ordered, write your name on the bag, and ship it or hand it over the same week, Jayson is the person to talk to. The custom blend work is the part that tells you the most about how the operation runs. Most roasters of this size do not roast a one-off for a car club. This one does.
