About
Pallet Coffee Roasters started in East Vancouver in July 2014, when a group of friends, including Sharif Sharifi and Shane Dehkodaei, turned an old fish-processing warehouse into a roastery cafe. From the start, the goal was to make specialty coffee approachable and let customers watch the roasting happen.
Pallet has since grown to several cafes across Vancouver, along with a brunch spot, Palate Kitchen. In 2019 it moved its roastery and flagship cafe to Railtown, where the larger space is used as a hub for public cuppings, events and coffee education. Director of Coffee Ben Rugg, a former New Zealand barista competitor, talks directly with producers and exporters and keeps long-term relationships with the farms behind Pallet's core coffees.
The lineup deliberately covers a range of tastes, from comforting darker roasts to floral and fruity single origins, plus seasonal blends, espresso and decaf. For visitors to Canada, the Railtown roastery is the best place to see how it all comes together.
