Passport Coffee & Tea on East Gray Road in Scottsdale has air-roasted coffee daily since 1983. It's a bean and tea shop, not a hangout. Tell staff how you brew, whether espresso, moka pot, pour-over or cold brew, and they'll suggest a bag. There are free samples.
They sell whole bean and ground coffee in 1 and 5 lb bags, green beans for home roasting, a big loose-leaf tea selection and compostable single-serve pods. They'll grind for you, and they ship.
