Peace Coffee has been roasting in Minneapolis with a fair-trade and organic mandate long enough that the politics are not a marketing layer. They've been publicly outspoken on immigrant rights, the kind of stance that loses some customers and earns the loyalty of others, and the loyalty side has been louder. The Greenway Building HQ on 21st Avenue South is the roastery, not a destination cafe.

The lineup is built for people who don't like their beans oily. Black Squirrel Blend is the one regulars name first, dark enough to read as a dark roast but with the dark-chocolate and black-licorice notes intact rather than burned out. Morning Glory and French Roast cover the rest of the dark spectrum without crossing into char. Seasonal Nocturnal shows up in rotation. The Peru light roast is the move for anyone who wants to taste origin character at the brighter end.

The roasting philosophy is the thing that ties the line together. Beans are pulled before they oil over, which is a choice with consequences. Drinkers who grew up on shiny dark-roast supermarket bags sometimes find Peace's darks too restrained. Drinkers who left those bags behind years ago find the restraint to be the point.

The values-driven sourcing is genuine rather than performative, and the bags carry that story without belaboring it. Buying Peace Coffee is buying a position as much as a coffee. For Twin Cities people who already share the position, that adds to the cup. For everyone else, the cup still holds up on its own. Visit the HQ for a pickup if you're nearby, but plan around the roastery hours rather than treating it as a cafe stop.
