Purpose Roasters

You can watch the roaster work while you drink your coffee. That is the basic offer at this small-town shop on South Main in Colfax, and the building itself reads clean, pretty, and homey enough that regulars use the word natural to describe the space. The roastery is the operation. The cafe is the front window for it.

New owners took over in 2021. The shop also made local news that year by posting that it would not enforce the state mask mandate, which is worth mentioning because it is part of the public record. Past that, the focus has narrowed back to what the shop does well: in-house roasting, lattes built on that coffee, and a small menu of house-made flavored syrups that show up in drinks like the lemon-vanilla latte. The decaf mocha gets a real recommendation. The cold brew with two extra shots is the move if you want to lean in on caffeine.

Mini donuts come out of the kitchen and they are the food order. Not a side, not a token pastry, but the thing customers walk in for alongside the coffee. The donuts get pulled fresh and the regulars time their morning around them. Hospitality runs owner-operator style, which means the person making your drink may also be the person running the roaster behind you, which is the kind of small operation Colfax has room for.

The Palouse highway brings most of the traffic. Drivers crossing the wheat country between Spokane and Pullman pull off, stand at the counter, watch the drum spin, and eat the donut. That is the visit. The space is not aimed at laptop work, and there is no pretense that it should be. Tables are a few. WiFi is incidental. The shop is built for the customer who wants to see how the coffee got into the cup, taste the syrup the owner made, and carry a paper bag of donuts back to the truck. For that customer, Colfax is exactly the right stop on the way to wherever the day is going.
