Raphael's roasts every order to order. Mail it in, the beans get roasted, the bag ships fresh. That is the entire operating model, and regulars stay in the relationship for years on the strength of it. Several note that personal responses come back with their orders, written in response to comments they tucked in at checkout. The Southern Pecan is the signature. It comes with an option to add ground pecan into the bag, which is the kind of small specific choice that turns a flavored coffee into something a regular reorders for a decade. Java Lava, Jamaican Me Crazy, and Dark Chocolate Pecan round out the flavored side. Black & Tan, Wake Up America, Tenn Harvest, and Guatemala Antigua handle the unflavored lineup. Tullahoma is the home address, but most customers will never see it. The operation is built around mail order and the relationship that comes with personal notes. Fast delivery is part of the contract. The custom roast date is the other part. This is not the shop to walk into looking for a cup. It is the shop to order from when you want a flavored coffee, a custom roast date, and the sense that the person doing the roasting genuinely noticed the comment you left in the order form. Southern Pecan fans, in particular, end up loyal. The optional pecan grind is what they reorder for, year after year, even when their tastes change everywhere else.
