Refuge Coffee Roastery serves coffee in 12-ounce pours and won't refill it. That's the kind of choice that filters who walks back in. The people who do return tend to call it the best coffee in Baldwin County, sometimes the best in Alabama, and the kind of stop that becomes a weekly thing on the Eastern Shore. Several regulars say they've made it their default cup whenever they're driving through Fairhope.

Jim does the roasting in-house, and regulars use the word artisan for him without irony. The menu stays small on purpose, which lets the espresso speak. People describe it as rich without bitterness, which is harder to pull off than the phrase makes it sound. Syrups are made in the building. If you want a starting point, the Long Black or the cappuccino, then the Hit & Sit, then the honey cinnamon latte. One regular adds lavender to the Long Black and swears by it. The cold brew handles the Fairhope summer. Bags of beans by the door if you want to take the roast home.

The space is warm wood, natural light, the kind of laid-back coastal feel that fits the town. Understated from outside, almost too understated. You could walk past the front and not register what's inside. Once you do, people sit longer than they planned, which is the test for whether a room is working. Take a book or take a call. The cappuccino isn't going to refill itself, but you weren't getting another one anyway.

The flags: one recent visit reported inattentive service, and the 12-ounce ceiling is a constraint for people who measure coffee in volume. If you want bottomless drip in a paper cup, you'll resent this place. If you want a cappuccino that tastes like someone thought about it, and an hour to drink it slowly, it earns the trip out to South Greeno Road. Volume drinkers should go elsewhere. People who care about what the espresso does on the tongue should put Refuge on the list.
