SK Coffee has no exterior signage. The cafe sits inside Vandalia Tower, a converted warehouse in St. Paul that also houses Lake Monster Brewing, and you have to walk into the building lobby before you'll spot it, which is the kind of barrier that keeps the foot traffic intentional rather than accidental. Inside is the payoff: lofty ceilings, white-painted brick, abundant plants, industrial-chic furniture, and natural light pouring through, which photographs well and works even better in person.
The single-origin micro-lots are the reason to come. The Ethiopian roast on pour over is the standard order for anyone who wants to taste what the roaster is doing without milk getting in the way. Matcha latte, nitro coffee, chai latte for the rest of the menu. Savory bakery items handle the food side. The space works for laptop work and for meet-ups, with enough room and enough outlets to support both at the same time, and dogs are welcome alongside their owners.
The honest caveat: the coffee polarizes more than you'd expect from a roaster at this level. Most customers praise it, but several have described it as sour, thin, or burnt, which is unusual enough at a serious roaster to mention and worth knowing before you commit to a 12-ounce bag. Try a pour over first as a sample before committing your home-brew budget. The micro-lot lineup is genuinely interesting and the Ethiopian is the easiest entry point. Bring a layer in winter; one customer found the warehouse extremely chilly in a Minnesota January, which tracks for a building with that much exposed brick and that high a ceiling, and the heating system seems to lose ground against the architecture every time the outside temperature drops below ten. The Vandalia Tower setting and the unmarked entrance are part of what makes the cafe feel like a place worth seeking out rather than stumbling on.
