SK Coffee: Coffee Bar & Roastery is inside Vandalia Tower in St. Paul, a converted warehouse that also has Lake Monster Brewing. There's no outside sign, so head into the lobby. It has high ceilings, white brick, plants and natural light. It can be chilly in winter. There are outlets, and dogs are welcome.

They roast rare single-origin microlots. Start with the Ethiopian pour-over. There's matcha, nitro, chai and savory bakes. They offer subscriptions.
