T3 Coffee Co. in downtown Collinsville is a family-run café, deli and roaster, with a loft and a second-floor rooftop patio. On roasting days you can smell it from down the block. Their site says the coffee's sustainably sourced and freshly roasted.

The Honeybee is their signature drink. In cold weather, try the bonfire hot cocoa, and in summer they make coffee popsicles. Lattes and cold brew are dependable, and the seasonal menu changes through the year. The deli does sandwiches and wraps, so lunch is easy, and there are handmade tote bags for sale by the register.

Inside it's cozy and quiet enough to take a call, with wifi and outlets, so students and remote workers use it a lot. The rooftop opens up more seating in warm months, and parking out front is easy.
