The Coffee Collective

The Coffee Collective is in a historic building on Liberty Square in downtown Sparta. It has two floors, with exposed brick, tables downstairs and couches and armchairs on the upstairs landing. The roaster is right in the lobby. There's wifi, though it can be spotty when it's busy.

The espresso blend is rich and balanced, and the cold brew is smooth. The breakfast sandwiches on New York bagels or croissants are favorites, especially egg and smoked salmon. The cinnamon rolls and chocolate muffins often sell out, and the gelato flavors rotate. You can buy beans in the store.
