Theory Coffee Roasters is in downtown Redding. The space is bright and minimal, with sofas, communal tables, window bars and outdoor seating. You can watch the roasting through a window near the bar seats.

The roasts tend to have bright citrus notes balanced with earthier ones, and the team has won national recognition. The house espresso goes into everything from flat whites to their ginger beer espresso, and single origins rotate on pour-over. Pastries and breakfast come from local partners. There's quiche, breakfast sandwiches and gluten-free options.

You can buy beans in the shop or online, and they ship nationwide. They offer a subscription too.
