Thou Mayest Coffee Roasters has roasted small batches in Kansas City since 2012. The shop has exposed brick, wood and plants. The main floor has the coffee bar and cocktails. Upstairs is quieter, with couches. There's a street-level patio and a balcony with city views, plus outlets and wifi.
Single origins rotate, and the Ethiopians are popular. Try the lavender latte or an espresso tonic. Cocktails use house cold brew. Beans are sold in the shop and shipped nationwide.
