The cream cheese and peach kolaches sell out, and when they sell out, they sell out. Owners Holly and Kevin bake the bread and pastries in-house in a rustic former auto-parts building on North 2nd Street, and the shop has the kind of family-run gravity that pulls drivers off the highway and out of the next county.
The sourdough pecan bread earns the drive on its own. So do the homemade biscuits, the brisket cheese sandwich, and the chicken salad on sourdough. The breakfast brisket biscuit is the move if you arrive before the morning crowd thins it out. The chicken bacon avocado sandwich and the chicken salad pimento sandwich both work. For the sweet side, oatmeal chocolate chip cookies, peanut butter chocolate chip cookies, cinnamon rolls. Take a sourdough loaf home so the trip pays for itself twice.
The space is charming in the unforced way old converted buildings can be. Family-friendly, peaceful, with Holly and Kevin often present and chatting with visitors over warm bread. The country market and farm components fill out the rest of the experience for anyone wanting to make it a longer stop. You can walk in for a kolache and leave an hour later with a sourdough loaf and a story about the building.
Plan ahead. Things sell out, often early, and there's an honor-system stand outside referenced in earlier visits, which suggests the operation has worn many shapes over the years. Call ahead, or accept that you might drive an hour for a kolache that just sold. Both versions are part of the deal here, and most people accept the deal.
The Hico run is the kind of trip that justifies itself the way bakery trips used to: a couple of hours each way, a few warm pastries in a paper bag, a loaf wrapped for the back seat, and Holly or Kevin behind the counter remembering your name from the last visit. That model still works.
