Wild Goose is small, tucked off the beaten path near I-10 in Redlands, and built for the to-go customer rather than the sit-and-stay one. Inside seats just a few small tables. Most of the seating lives outside on the patio, which is where the regulars settle. Saturday hours close at 1 p.m., which catches first-time visitors off guard. None of this is hidden in the listing, and none of it is a problem if you know what you are walking into.
The coffee is the story and the reason the shop is on the map. Single-origin in-house roasted beans, with Ethiopian, Guatemalan, and Colombian rotating through the bag program. They supply other coffee shops in the area, which is the kind of credential that matters more than any award would. A portion of every pound goes to a greater-good cause, which is the kind of detail you mention once and let stand without making it the whole brand.
Drinks worth ordering. The Redline cold brew with oat milk and agave is the signature, and the order to make if you have one visit. Purple Rain latte with lavender for the floral move. Carrot Cake latte if you want dessert in a cup without committing to a slice. Spanish latte for the steady order. Gingerbread latte when winter comes around, which in Redlands means December and not before. Americano if you want to taste what the roast is doing without anything else getting in the way. Pour-overs of single-origin beans, with the Ethiopian a favorite among the regulars. Parliament chocolate bars at the register, which pair with the cold brew in a way you will figure out the first time you try it.
Well-behaved dogs on the patio, family ownership, clean simple aesthetic, no clutter. If you want a laptop afternoon or a long sit-down with a meeting, this is not the room and you should drive elsewhere. If you want to buy beans, sit outside with a Redline and a chocolate bar, and be back in the car in forty minutes, it is exactly the room and the regulars will be glad you came.
